Drip or Espresso Methodmild: a light roasted coffee blend that will showcase many hidden taste attributes often overshadowed by roasting to a darker shade. this blend was created w/ the east coast cinnamon style of roast profile in mind. ours is just a pinch darker but it still allows for all the brightness & acidity normally reserved for that "new England" cinnamon roast style of coffee. w/ Costa Rican coffee encompassing a majority of the blend, it hits the taste buds w/ an immediate sparkle & palate pop that is as much the coffee varietal as it is the lighter roast profile. this cup delivers a fuller body that has a sweet nutty & a slightly citrus flavor w/ medium to high acidity. it is well balanced & is not too heavy on the palate. excellent when brewed as espresso.Options:

8.95Columbian san augustin Huila lot 48 (12oz.) preferred drip methodsmooth: this boutique coffee is grown the south-central Huila district. this coffee is exclusive Arabica Typica, shade grown at 3000+ feet above sea level & exclusively sun dried. w/ excellent body, layered flavors & intensity reminiscent of a great Kenyan coffee we roast this coffee to a mid-city roast to highlight these tremendous flavor attributes & not mask them in a darker roast profile. this allows the layers to unfold through the first sips. a truly complex layered Columbian which is a rarity most times. you will notice the intense flavor of caramel w/ a hint of sweet baked molasses, & a delicate butter finish. no bitterness throughout the cup.... limited supply available for the first half of 2011. enjoy.Options:

Preferred Drip Methodsmooth: this European prep Nicaraguan is some of the most delicious Nic we have tasted in a long time. grown in the el Horno & La Tablazon, Dipilto, Nueva Segovia regions at 1250 meters plus, this coffee has high notes of buttery bittersweet chocolate, w/ a hint of brightness featuring an orange citrus tint. if you love centrals than this is a good bet for you. not sure what European prep means: (depulped in pinhalense machines, fermented for 12 hours in cement tanks, washed in clean fresh water, dried in machine driers down to 42% moisture & finished on full-sun patios.)Options:

Preferred Drip Methodsmooth: Ethiopian Yirgacheffe the finest the country has to offer is virtually unknown by most people. this intense feeling coffee enhances the palate w/ its very distinctive floral bouquet, wine-like syrupy body, notes of tangerine citrus w/ an overall smooth mellowness that’s unique unto itself. Ethiopian Yirgacheffe is a washed coffee in which the coffee beans, after having the outer layers of skin & fruity pulp removed, are soaked up to 72 hours in fermentation tanks. beans treated w/ this "wet" method will generally have a higher acidity, a cleaner winey or floral flavor, & more of a full body than the beans processed by the dry method.Options:
